Optimizing strategy for a career change and tuning Linkedin + Xing profiles

I am a multilingual IT delivery specialist with 25y experience. I would like to change my career into a completely different domain closer to my hobbies and areas of my interest/experience, such as: film, music, outdoor and extreme sports, aviation, aerospace. I need someone create a strategy to get in top jobs in the mentioned areas and setup my linkedin and xing profiles accordingly.
