Paralegal for real property

I have informal format of quit claims from my uncle who resided now permanently in the Philippines due to his old age . He just made a letter that he has no claim and no interest in our property here in Los Angeles It was signed by him and notorized in the Philippines . He is our joint tenants and he is in our title but the main buyer of the house is me and my husband. I need a legal advise how do I file the quit claims with only paper of statement. I don’t know if it is acceptable or what ever. I’m trying to inquire in recorder’s offfice but they said I need a Deeds. I don’t know how do I do it step by step. I don’t know either if my uncle will be in our title. I don’t know how and where to inquire if my uncle will be in our title in our property.
