Explain me how this chrome extension works

This extension works with different websites, but it should also be possible to do what the app does by hand. I am a software engineer myself, but web technologies is certainly not my specialisation.
I would like someone to carry my through the code and explain to me what the code does, because I want to improve my webtechnologies knowledge:
- I want to know how this app works for the new york times and I would like to know how I would do this by hand
- I want to know how this app works for the ft and I would like to know how I would do this by hand
- I want to know how this app works for De Volkskrant and I would like to know how I would do this by hand
All above three options should not be too different from each other. I just want to understand what the code does and the way I measure whether I am able to understand the code is by checking whether I can do it by myself by hand.
