monitoring sensor data via tasmota scripting

We need to log sensor (on/off) trigger event in sd card in customized sanoff 4ch pro. Buttons are customized and serve as input sensors. This iot device will be offline & work remotely so mqtt communication is not possible therefore we want to monitor sensor data via logging and store that data in sd card.
