Set up computer to record transient input from very small accelerators, preferably every millisecond.

I have a drop tower and wish to measure the impact transient as a weight is dropped onto a helmet. One accelerator above the helmet cushion and one below to determine the effectiveness of the cushion. I would like to capture the data and print out a curve of the transient at will. This would be the first and most elementary step. Addition engineering work will be required as the project progresses.
