Extract images + rim size data from 5 PDF catalogs (200 pages total) and deliver organized Excel (one-time job)

I need someone to extract all rim images and rim size/model information from 5 different PDF catalogs, with a combined total of around 200 pages. Each catalog has a different layout and design, so the extraction must be done carefully. This is a one-time extraction only — no automation or script required.
I just need everything organized so I can later import it into my internal system.
Extract every rim image from all PDFs (good resolution required).
Save the images in a clean, organized folder (by PDF or by month — open to suggestions).
Create an Excel file with the following columns:
Rim model/size
Description (if available)
Image filename
Relative path to each image (no embedded images)
Double-check that all paths correspond correctly to the folder structure.
Since each catalog has a unique layout, careful manual or semi-manual extraction is expected.
