Adobe Illustrator Instruction over Virtual Platform (e.g., MS Teams)

I would like to convert the attached image to Adobe Illustrator vector art. Instead of actually having someone do the work for me, I would like instruction over Zoom (or MS Teams, etc.) on how to do it. I have a basic working knowledge of Illustrator but am trying to improve my skills. First project is probably 2-3 hours with possibility to expand to other projects.
