Adobe Illustrator Assistant to Build Out Island Map with Basic Street Vectors, Place Icons & Text, Organise Layers

Hi there,
I am creating a free Lord Howe Island Map for visitors to the Island as part of my Lord Howe Life website. It's a small island so the project is not huge, but it will be important from the beginning to be very organised with layer labelling and grouping.

I also have a map that is currently distributed on the Island, ExampleMap, that we can use as a guide for how we will build out our map, even though ours will be unique and more beautiful!
I will be wanting to start work immediately, and I will be working with you in real time so we can proceed at lightning speed! I will be creating the few icons we may need from the web and letting you know where to place them according to the map we are 'copying'. Over a couple hours I hope we can have the street vectors done, and all major icons placed.
The street vectors & walking track vectors like are seen on the Example Map, we are creating them as vector lines so they can be easily updated in design. For example, we will be able to adjust thickness, separate sections, adjust to dotted line, change colour etc.
Some of the icons will be things like Public Toilet, BBQ, but most will just be circle markers with numbers inside to mark a business location. We will also add the same Landmark Names & Titles near to the places and street locations that are on the Example Map.
The goal is to start simple, organised, but build to a beautiful map that is well structured in the backend. This map will get the occasional update so by keeping things organised I can update it quickly in the future with any new information.
Plan of Attack will be:
1. Start with AI File of Island Outline
2. Use Google Maps & Example Maps to create our own Street Vectors (Lines Only) within the Island. Make sure these are in a separate layer and group from the Island outline, it should remain exactly how it is.
3. Use Example Maps to add the Titles for the Street Names & Landmarks in the same places. Please ensure these are grouped separately in layers so that we can adjust size, colour & fonts etc as text groups.
4. Add Public Toilet & BBQ Icons from the icons I provide.
5. Add Business Location Icon Markers with our own Unique Numbers from List - Google Sheet To Be Provided When At This Stage. The numbers will be different to the numbers on the ExampleMap, so we start with Location markers only, then add numbers.
6. Ensure Final Organisation Into Groups Of Layers
