Redesign a side (of an existing traditional restaurant)

Good day, we need to redesign an existing side of a traditional restaurant located in Bethlehem (Beit Sahour).
The existing is as per the photos.
The side is the view of our restaurant to the wadi.
What we need is to redesign and demolish the existing concrete fixed chair and use the wooden chair instead them.
And the side we want to use wood or traditional stone with some arcs or whatever needed.
For sure we need to use glass windows/door to fully close in winter and open in summer.
