Minimalist Landscape Recreation in Illustrator

I'm looking to have a desert mountain landscape photo that I took recreated in Adobe Illustrator for graphic design purposes. Must be at least in landscape format and at least 8.5 x 11 inches. The creation cannot use a stroke with the pen tool at all. The new design should be inspired by the minimalist style, focusing on unadorned shapes and limited color schemes sans the excess of details. There's flexibility with the color palette, it doesn't have to match exactly with the original. Any adaptation is welcome to better suit the minimalist style.
Ideal candidates should have a strong grasp of Adobe Illustrator, experience in minimalist design and the ability to effectively adapt colors to the aforementioned design style. Reference photo will be provided. Additional details concerning this project will be provided.
