PDF Text to Google Sheets

I have a set of PDFs that contain nothing but paragraphs of text—no tables or numbers. Your task is to lift each paragraph exactly as it appears, paste it into a shared Google Sheet, and keep any bold or italic styling intact within the cell.
Accuracy is key: the order of the paragraphs must mirror the source file page-by-page, and every bit of emphasis (bold/italics) needs to survive the trip. Feel free to use the OCR tool of your choice as long as the final sheet is clean and searchable.
Deliverables
• A Google Sheet where each paragraph occupies its own row in original order, with bold and italics preserved.
• A brief note confirming the text was proof-read and cross-checked against the PDF.
