PDF Text Extraction to Sheets

I will share a batch of PDF files that contain plain text laid out in paragraph form. From each document I only need certain details pulled—names, dates, and a handful of key phrases I will specify up front—and those details placed into the appropriate columns of a Google Sheet I have prepared.
You’ll scan through every paragraph, lift the exact wording of each required data point, and paste it into the sheet without adding or omitting characters. No extra cleaning or rewriting is necessary beyond copying the precise snippets I flag. Accuracy and consistency matter more than speed, so double-checking each entry before marking the file complete is essential.
Deliverables
• A fully populated Google Sheet with one row per PDF, all requested fields filled in.
• A brief note if any PDF is missing a required piece of information or is unreadable.
Once the sheet matches the source files exactly and every file is accounted for, the task is done.
