PDF Data Entry Categorization

I have a collection of PDFs that mix textual descriptions with numeric values—everything from names and addresses to invoice totals and reference codes. I need every line transferred into a spreadsheet and neatly grouped under the correct categories exactly as they appear in the source documents.

Here is what matters to me: data accuracy, consistent formatting, and clear category headers in the final Excel or Google Sheets file. If you prefer to run OCR before you start typing, that is fine, as long as the end result is error-free. I will provide the PDFs and a short sample sheet that shows the column order I expect; you simply continue that structure for the rest of the files.

Deliverable: the completed spreadsheet, ready for a quick spot-check and immediate use.
