OCR Scanned Docs to Sheets -- 2

I have a batch of scanned documents that have to be turned into clean, editable rows inside a shared Google Sheet. Because the files come in different layouts, each page will need to be run through reliable OCR first, then checked line-by-line for accuracy before any data is pasted into the sheet. Once the text is captured, arrange it in the columns I will provide and keep the original document order so everything stays traceable.

Key deliverable
• A Google Sheet fully populated with text extracted from every scanned page, free of OCR errors and formatted exactly to the column headings I give you.

I will grant view-only access to a sample of the scans so you can decide on the most efficient OCR tool—Google Drive OCR, Adobe, Tesseract, or your own preference is fine as long as the final entries are 100 % readable and consistent.
