Google Sheets Inventory Tracker

I have a e-commerce fulfillment office that has a myriad of packaging materials (various sizes of boxes, envelopes, etc). Each order needs a specific type of packaging. I would like a Google Sheet that has a list of my various packing materials and as I fulfill orders I would like to click a button under each packaging choice and track how much I use during the course of a day, month, year. As I purchase more boxes, envelopes, etc... I would add to a number and then each click as I fulfill would delete from that number.
