Google Search Console expert needed

I'm in need of an experienced Google Search Console specialist to help me address a specific issue.
I have 1.5k products in my E-com store. WHen I check SC I can see that almost all the impressions are coming from product snippets.
The issue is that the product snippets report shows an average of only 30 to 60 (changing daily), although I have 1.5k products and I think much more products snippets should be available.
I have tested my products in the rick result test and almost all of them are eligible for rich results, so there is nothing wrong in the structured data I believe.
I need to increase the number of product snippets in SC
