I’m developing a ready-to-eat meal and need a sous-vide chicken recipe that ticks several boxes at once: it has to be genuinely healthy and low-calorie while remaining moist, flavour-packed and, above all, tasty. The finished dish must be 100 % gluten-free, dairy-free and keto-friendly, so every ingredient—including the sauce or marinade—has to respect those constraints.
You’ll work with skinless chicken (breast or thigh—your call) and build flavour through a clever mix of herbs, spices and food-grade oleo resins. I’m looking for a bright, low-carb sauce or marinade that can survive pasteurisation temperatures without separation or dulling of flavour, making the chicken shelf-stable yet restaurant-quality straight out of the pouch.
Deliverables
• Step-by-step instructions from trimming to final chill, including precise metric weights and sous-vide temperature/time profiles.
• Complete ingredient list with allergens flagged and clear sourcing notes for the oleo resins.
