Fried Chicken Recipe Development -- 2
Budget: $15 – $25 USD
I operate a quick-service fried-chicken outlet and want to level up the flavour experience so customers keep coming back. To do that I need a full, production-ready recipe package covering two menu staples: classic non-spicy crispy pieces and a signature zinger-style fillet.
What I expect from you
• Precise spice blend in grams per kilo of meat, built around easy-to-source ingredients and priced for tight food-cost control.
• Breading formula (both dry and wet stages if required), also in gram weights, scalable from test batches to full store volume.
• A marination method that guarantees tenderness and juiciness—timings, temperatures, and step-by-step handling notes from delivery to fryer. I am open to brine, buttermilk or hybrid approaches as long as taste profile, tenderness and juiciness are equally maximised.
• Clear SOP style write-up I can hand straight to kitchen staff, plus an Excel or Google Sheet that auto-scales quantities.
• Brief cost-per-portion breakdown so I can see food-cost percentages at a glance.
Acceptance criteria
– Finished chicken must stay moist after a 20-minute hot hold.
– Crunch should remain audible after 5-minute rest.
– Seasoning should read as flavourful rather than overtly spicy, in line with a family-friendly profile.
– All ingredient measures listed in metric grams only
