Text Data Entry from Scanned PDFs

I'm looking for someone to help me with data entry from scanned PDF documents. The task primarily involves working with text data, which needs to be entered into a spreadsheet. Once the data has been entered, it will need to be sorted alphabetically within the spreadsheet.
