PDF dump to Excel / Google Sheets

I have 80 pages of PDF credit card statements and I need a subset of that data put into a spreadsheet. I only need the date. below are examples of what the source looks like and is, as well as the finished product, attached please find source.pdf and finished.csv should look like. Ascending or descending doesn't matter to me. What is important are the details. The first 6 columns, in pink, are from the first page of each statement, all but 2 of the statements are 3 pages long, one is 4 pages and one is 8 pages. The 8 page one has some extraneous information on it. Anyway, all of the other statements/data, of which there is a total of 80 pages, or about 30 statements are 3 pages long. The individual transactions seen in columns G,H,I do NOT require entries from the summary pages, meaning the cells can stay blank as seen in rows 3-8. This should be a very easy task for someone with scripting skills. The source document is 80 pages of statements, the deliverable should be a CSV. I used coloring in this example but it isn't necessary for the deliverable. My expectation is that all of the transaction details are correct, formatted in such a way so as to be able to read it and organize it. I hope this makes sense.
