Organize information from booklets and flyers into a filterable spreadsheet

I would like someone who can organize information from booklets and flyers into a filterable spreadsheet. The idea is to have everything on one sheet using the same column headers so that the information is searchable and comparable.
Specifically, I am looking form column headers of, key applications, application surface, product types, product point (what makes it special), sales categories, etc, the idea being to build a filterable landscape of products that works as a matrix and can be built on. Headers would be determined by the common information available in the documents. The documents can also be converted into xlsx so it will me copy and pasting into the required formats.
I have attached an example of what I am looking for (.xlsx) as well as the source materials (.pdf) for them. Please let me know if more is needed.
