Google sheet expert to extract dynamic data

I need help extracting data from a google spreadsheet on a daily basis.
We have 4 tabs with sales data that changes daily.
The sales data from the 4 tabs are presented in a summary tab.
The summary tab shows the total sales, and average price, percentage occupancy.
As sales change each day the figures changes.
We would like to create another tab that extracts the data from the summary tab on a daily basis and presents it in a graph that expands over time in order to be able to track changes in price occupancy and sale prices. The challenge we are looking to overcome is how to extract the data daily without the data being overwritten by the changing data.
Maybe presented in google analytics or in google spreadsheets graphs
data in the spreadsheet changes daily, however, I want to store the data produced daily and create a graph showing how the results change over time.
The problem I have is that every time the data changes it changes the data extracted from the previous day
