Excel Power Query - Transform messy pdf structure

I need help using power query to transform a job card which has a mixed tabular and pivoted format. I will be transforming these from a sharepoint folder. I don't need the whole solution, just a demo of the transformation steps to combine say 2-3 of these documents into a tabulated excel spreadsheet. I would then use this to connect to a sharepoint folder for progressive adding of these data points to the spreadsheet over time.
