Create Spreadsheet with Dashboard

I need to be able to update the status of our LIVE electrical installation projects that would include :
Install cables
Cut out plaster
Fit off lights and power points
Test and commission
These will need to be updated via dropdown boxes
We would also like to see LIVE charts of each project on the dashboard
Everytime we start another project we would like to be able to add another sheet so the project is ready to update easily
