Create 7 Datasets in Excel using dummy/sample data based on scenarios

I need help creating excel datasets using dummy/sample data based on 7 scenarios.
Help Desk
Employee Engagement
Sales Rep Performance
Shop Performance
Sales Performance
Inventory Management
Courier Analysis
Each scenario/dataset will have it's own excel sheet and a set of rules, and I have already made a start to each one adding in sample data. (some examples attached)
I need this sample data for reporting mockups so there needs to be a lot of it. Some datasets will be large and others small, depending on the scenario.
I will provide all the descriptions and business logic for each dataset/scenario
One example:
Help Desk Dataset
- Populate the Help Desk table with daily dummy data for 1.5 years (01/01/2020 to 30/06/2021).
- The Number of rows that have "Status = Resolved" should increase slightly over time
- The average value of "Interaction Time" should decrease over time
This job will need someone who is good at using excel, modelling and working with large datasets
