Convert PDF into MS Excel Spreadsheet (approximately 700 lines & 7 columns of data)

I received a 12-page pdf-file copy of a spreadsheet containing attorney's time entries (showing name, date, a description of a tasks, the time, hourly rate, and total costs).  I need to have the pdf-file converted into an MS Excel Spreadsheet so that I can sort the data by each attorneys' name, and otherwise analyze the data.  There are approximately 700 lines of data with seven columns each.  I need to be able to sort each column alphabetically and/or numerically.

I would like this completed within one week from July 3, 2024 (sooner is fine too).

I will provide the pdf-file after hire.
