Convert PDF (also in word) to Excel

I have a catalog that is in PDF I am able to convert it to Word but I am trying to convert it to EXCEL. I am not sure if it is possible to convert at all. I have attached the original PDF, the Word doc ( which I was able to convert if it is needed) and an example of an old catalog in Excel (an example only) which is the way we want it.
Please let me know if you think this is possible. Please don't take on the job if the catalog will not come out similar to the example shown.
Thanks, Greta
