Close to Real-Time Dashboard

I want to pull file names and created time/date from multiple subfolders in a main folder. The subfolders keep updating throughout the day, and I just want to pull the file name and time/date created. Once the files are pulled, I would like a stacked bar chart and pie chart. The stacked bar graph would have the time of day on the x-axis, and the y-axis would be each individual folder. These are for an instrument utilization project where we could tell the percent time the instrument was being used (pie chart) and what was running (subfolder) at a particular time of the day (stacked bar chart). Each subfolder would correspond to a different bar on the chart. I would like a macro so the data could be pulled and added to the graphs on demand. Power Bi/VBA macros/power query are things that may work.
