Clean and Easy to Manipulate Timeline

Hello,
I need 2 timelines created. 1) Weekly schedule for 30 employees that shows their availability
2) A 4 month calendar showing off days for those employees
The data is from a survey they took. Aise from standard data manipulation necessary for this type of project, all times will first need to be set in Eastern time since the employees live all over the US and some even overseas.
On both timelines, I need to be able to easily sort the rows of employees based on location and role. Excel, Sheets, and/or Notion would be fine.
I'd like to have this done as soon as possible. I attached a screenshot showing what the dataset looks like. The employees' locations and roles will be provided on a spreadsheet.
Please tell me if this is a project you'd be able to complete and if so how much time you'd need as well as cost. Please also not if you will be using Excel, Sheets, and/or Notion
