Automate Gmail leads to Google Sheets

I'm receiving leads through my Gmail and I need assistance in extracting and organizing this data. The leads come in plain text emails and I want the following information to be collected in a Google Sheet:

- Name
- Email address
- Date
- Boottype
- Price / Prijs
- Lengte Boot

I'm looking for someone with experience in data extraction and Google Sheet automation. Please provide relevant samples of your work.
