Artificial Intelligence application for PDF. files data extraction

I have a project related to AI basic application, the function of this applicationis to read basic large number of PDF files (academic articles) and extract same data from them into table (Automated PDF Data Extraction). this table is basecally 15 - 20 columns. example of the extracted data; sample size of the study, country of the study, theories used in the study, summary of the findings.....etc. One of the outcomes will be the confidence level of the extracted data (from 0% to 100%). Also, as some of the trained data might not be highly accurate, I need to have the option of re-train the application in various dataset in future so i can add more column or delete them if i needed.
