how to record incremental increase as a tally in another cell, but not record decreases

On the inventory Dashboard tab, in cell F11, each time that increase by 1 which is done by pressing up on the form control button, i want that incremental increase to be added to cell E3 on the stock sold to date tab, but cell F11 will be decreased when stock is removed, but i want cell E3 to only capture increases to show overall stock we have had of that one item.
