Help with upgrading an educational restaurant simulation written in VBA

Overview
I would like to purchase some consulting advice. I am a high school business teacher and hobbyist programmer. Right now, I use VBA for programming because of the excel functions.
I am building a restaurant teaching game for my students. I could not find a dedicated teaching game with sufficient complexity, depth and nuance. Real restaurants have only a 5% chance of making it and working in them stinks.
I want them to fail so they can learn.
I have developed a restaurant simulation prototype, but it needs some work. I am looking for some technical, design and game playing advice.
The core of the model is “RevPASH” or revenue per seat per hour. I want the students to figure that out. Demand is random but peaks at lunch and dinner.

Actual Request
I would like to have a code review. I feel like the current code is too array centric and would like to consider alternatives. Perhaps a different data structure or objects. I would also like to improve the dashboard.
I would like to enhance the prototype with better graphics and error handling and let the student build their own dashboard
I would also like to discuss some technical aspects as well. A discussion of the proper platform to use and language (VBA, Python or Visual Studio or other) as well as database backend.
