Commercial Kitchen Engineer in Salt Lake City for small bakery

I am in need of a Professional Licensed Engineer in Utah with experience in commercial kitchen and code-compliant plumbing design. The primary task involves approving our plan layout of our kitchen and our grease trap requirement. I am a baker realizing my dream bakery. With my limited budget I hope to avoid installing an underground grease trap. I talked to an engineer at the Salt Lake Public Utilities and he said since, my project is small I can get an under sink grease trap approved by a professional engineer. I will be signing a lease soon and this grease trap issue will determine how I will be moving forward.
