converting a book into an ebook

My cookbook designer has finished laying out the e book version of the book. She has done a fine job but she can't figure out how to make it open like a book rather than reading by scrolling from top to bottom. She insists that the reader needs to "enable" their Kindle somehow for that to happen. I have published three prior books and have bought dozens of ebooks and they all have opened like a book without any such action. I'm under a deadline and looking for someone who can help finish the job.
