Write GitBook from 8 pages of FAQ doc

I need help with transferring existing user guide from doc to gitbook (in English, related to marketing automation software). User guide document is a 8-page dense doc compilation of how-tos and best practices collected from internet, with no sorting or grouping whatsoever. This needs to be reviewed, analysed and reorganised into structural blocks (structure recommendation is expected from freelancer), and copied into a gitbook. Sample doc section attached.

Looking for document editors who know how to layout text data nicely.
Rewriting optional.
