I need a concise, audit-ready documentation pack that captures our entire sous-vide chicken production flow and the safety controls that keep it shelf-stable and ready to eat. The core of the job is to translate the way we actually work on the line into a written set of production and safety guidelines, complete with standard operating procedures (SOPs) that my team can follow and an inspector can sign off on without extra explanation.
Scope of work
Our process starts with ingredient sourcing, moves through the precise sous-vide cook, then on to rapid chill, packaging, and cold-chain dispatch. I want each of those stages mapped in order, showing who does what, with temps, times and any critical limits called out. Alongside that, the document must spell out food-handling procedures, sanitation standards and the emergency protocols we rely on if something drifts out of spec.
Deliverables
• Production guideline document (ingredient sourcing → final packaging sequence, step-by-step)
• Safety guideline section covering food-handling, sanitation and emergency response measures
• Stand-alone SOPs formatted for quick reference on the shop floor
I’m happy to supply existing batch logs, temperature charts and supplier specs as raw material; you organise, polish and present them in clear language. A background in HACCP, USDA or FDA RTE requirements is a plus, and familiarity with MS Word or Google Docs is fine as long as the final file is easy to update internally.
