Website Email Setup

I need someone to configure outgoing email on my website so messages actually land in the inbox and not the spam folder. Once you got this working, connect my contact form and signup and password change confirmations to it and suggest me a good e-mail app to install on my server so that I can handle incoming mail from clients in there and filter them into mailboxes, etc.

My sites run under Plesk. They all use the DNS of the domain providers (Hover and Namecheap)
