Local SEO for Restaurant Subdomains

We are experiencing an SEO issue related to the site titles for our multi-tenant restaurant websites. Our setup involves a main marketing domain that does not include restaurant menu or ordering functionality, while the subdomains for each restaurant contain this functionality.
Currently, all subdomains are incorrectly displaying the same site name, which is set to the main domain's name. For example:
Main domain: maindomain.com – Site name is “MAIN”
Subdomain1: subdomain1.maindomain.com – Site name is also “MAIN”
Subdomain2: subdomain2.maindomain.com – Site name is “MAIN”
Subdomain3: subdomain3.maindomain.com – Site name is “MAIN”
However, each subdomain should display the name of the respective restaurant (customer), not the main domain.
The subdomains are built using React.js, and previous SEO efforts included the implementation of JSON-LD and meta tags to address this issue. Unfortunately, the changes have not yielded the expected results.
I have run SEO checks and found that tools are correctly identifying the site titles, but the issue persists.
