Desktop PDF-to-Excel Converter

I need a cross-platform desktop application (Windows and macOS) that converts PDF files into structured Excel workbooks with a built-in parsing engine—no cloud calls or third-party APIs. Accuracy is paramount: every table row in the PDF must appear on its own line in the spreadsheet, with columns preserved exactly as they were formatted.

Core workflow
• Drag-and-drop or file picker for single files or whole folders, because batch processing will be a daily requirement for our team.
• A clean, minimal interface: think clear buttons, progress bars, and an unobtrusive data grid where the extracted content is displayed.
• Users must be able to tweak any cell in that grid before export, then save the result to XLSX first and, when needed, to CSV or any other common delimited format.

Technical expectations
• The parsing engine should cope with multi-page PDFs, mixed font sizes, and merged cells without breaking alignment.
• Everything runs locally, so solid memory management, crash-resistant threading for batch jobs, and detailed logging are vital.
• Deliver installers (or notarized DMG for macOS) plus documented source, build steps, and a succinct user manual.

Acceptance
I will provide a representative sample set of PDFs; 99 % line-for-line accuracy across that set, plus successful exports in all promised formats, will constitute sign-off.
