Setting up Square Restaurant POS System

My current Square for Restaurants
It includes cafe, bar, wine, spirits, liquor, wines, gelato, juices. It needs to be able to order from tablets.
Hardware available are 3 terminals 2 tablets. 5 handheld terminals. 3 screens for kitchen. Bar and coffee areas., The biggest pain-point is menu arrangement: I’m running a large menu—well over 50 items—spread across multiple categories such as appetizers, mains, desserts, drinks, and assorted condiments. Departments and sub-departments were never structured correctly, which slows service and skews sales reports.

Here’s what I’m after:

• Start with a fresh Square for Restaurants instance, deleting the old data but keeping historical reports safe.
• Create a logical department → sub-department hierarchy that reflects how my team actually works on the floor.
• Enter every menu item, assign it to the right category, and build the necessary modifiers and condiment prompts so staff can place orders in just a few taps.
• Configure taxes, discounts, and any other settings Square needs for seamless end-of-day reconciliation.
• Validate the whole setup by running test transactions and confirming that reports break down accurately by department, category, and item.
