Expert iCloud Storage Engineer Needed

Case details:
The backup containing the data I’m looking for was recently (one week ago) overwritten by a new one that no longer includes the missing information. As you may know, Apple only keeps one backup at a time. I’d like to know if there’s any possible way to access the old backup despite it being replaced.
Another possible approach is to recover lost notes from a failed iCloud sync, which also occurred around one week ago.
I had important notes stored on my iPhone, but iCloud sync was initially turned off. When I realized this, I enabled iCloud sync, and at that moment, all the existing notes from my Mac populated on my iPhone, while the iPhone-stored notes disappeared. After this, I updated my iPhone to version 18.3.1 and then performed a backup (without being aware of the disappearance of my notes), which, of course, did not include the notes I had—neither on my iPhone nor in iCloud—prior to the synchronization. After speaking with Apple Support, I followed their recommendation to restore my iPhone to factory settings in an attempt to access the old backup, but this was unsuccessful.
I’d appreciate any guidance on whether there’s a way to retrieve data from either of these situations.
