Typing Handwritten Notes into Excel -- 2

I need assistance with transcribing and organizing my handwritten notes into Excel tables. The notes, which span 28 A4 lined pages, consist of data recorded at 10 second intervals across three columns: Time, Slide pressure, and Head pressure. These notes are divided into three distinct sets corresponding to different dates.
Key Requirements:
- Accurate transcription of handwritten notes into standard Excel tables with borders.
- Organization of data chronologically by date and time.
