Contact Info Extraction from MS Outlook

Looking to collaborate with an expert to help us build an application that can extract typical contact info from our MS Outlook (Office 365) & other web based emails engines. The email may be in use on a mobile, desktop or web app.
Use case: User triggers this action from the UI of an email on their device. You shall share the trigger mechanism, before implementing. Your app (on our cloud) wakes up & extracts the contact info from it, formats it in a certain way, & stores/appends it in a text file or database in same cloud. Each user will have their own extracted data file. We are open to your suggestions as well.
Multiple extracts will be done in any session to the user's extracted data file.
Your app closes when needed.
The app must be smart enough to detect various ways folks put contact info in their emails or signatures.
