PDF/Image to Excel Conversion

I have a collection of PDFs and scanned images that contain a mix of text and numerical information arranged mostly in paragraph form. I need every detail lifted accurately and placed into an Excel sheet so the content is easy to sort, filter, and analyze later on.

Clean transcription is critical: spelling, punctuation, and number values must match the source exactly, and the data should be split logically across columns in a way that preserves the relationship between figures and their associated descriptions. Because the originals are paragraph-based rather than tabular, some judgment will be required to decide where each piece of information fits best in the spreadsheet.
