JPG/PDF to Categorized Excel

I have a folder of JPG images and a few PDF scans that contain text-only records. Your task is to capture every character, convert it into an Excel workbook, and split the information across multiple sheets that match the category list I will supply. Accuracy matters more than speed: the final workbook must read exactly like the originals, with no dropped lines or typos, and each entry has to sit under the correct heading.

You are free to use reliable OCR software, but every page must be double-checked manually so we end up with clean, searchable data. I will provide:

• Source JPGs and PDFs
• The master list of sheet names / categories
• Any formatting rules that appear in the originals

Deliverable: one .xlsx file containing separate, correctly named sheets populated with the verified text. I will spot-check at least 10% of the rows; if I can’t find a single error the job is complete and approved.
