Categorize Mixed Excel Data

I have several Excel workbooks that hold a blend of text, numbers, and dates. What I need from you is straightforward: take every row of information, make sure it ends up in the right place, and structure the final file so the content is grouped by category instead of the loose mix it is now.
You will receive the original spreadsheets as-is. Once you have them:
• Enter or copy any data that isn’t already in the sheet where it belongs.
• Re-arrange every record so items that share the same category sit together—this could be separate tabs, filtered tables, or a clearly marked column; whichever keeps things tidy and easy to navigate.
• Keep all numeric and date fields intact; none of the calculations or timestamps should be lost in the shuffle.
The finished workbook should open in standard Microsoft Excel without warnings and let me jump straight to each category without extra filtering. If you have a preferred method—PivotTables, Power Query, or simple sorting—feel free to use it as long as the outcome is clean, accurate, and clearly categorized.
