PDF Invoice Extractor App

I need a Windows desktop utility that can batch-process supplier invoices in PDF format, pull out six specific fields—VIN, Engine, Model, Freight, Insurance and Subtotal—and drop them neatly into an Excel workbook. The same program must cross-reference the Model value against a set of codes that I maintain in an internal admin panel. When it finds a match, it should automatically generate the associated number and place it in a separate column; if I later update or add a model in the interface, the change should apply on the next run without any code edits.

Key functions I expect: reliable text recognition from a variety of PDF layouts, an intuitive drag-and-drop or folder-watch workflow, and a simple, password-protected screen where I can manage model-to-code mappings on the fly. A compiled Windows installer plus fully documented source code will complete the delivery, along with a quick user guide so my team can start processing invoices right away.
