Extract PDF Stats to Google Sheets

I have a batch of PDFs where the numbers and statistics are buried inside regular paragraphs. I need those figures pulled out with precision and entered into a structured Google Sheet. The job is strictly text extraction—no images or tables—so you’ll be skimming the paragraphs, isolating every relevant numeric value, and placing it in the correct columns I’ll share once we start.
Accuracy is critical; the figures drive reports downstream, so a single misplaced digit creates headaches later. If you have experience using tools such as Adobe Acrobat, OCR utilities, or custom scripts to speed up manual checks, great—just make sure the final sheet is clean and consistent.
Deliverables:
• A Google Sheet populated with all numbers and statistics from the provided PDFs
• A quick note on any ambiguities or unreadable sections you encounter
