Extract PDF Data to Sheets

I have a small batch of PDFs—no more than five files, each under ten pages—that contain a mix of text and numerical information. I need every field lifted cleanly from those documents and placed into a Google Sheet I will share with you. The sheet should mirror the logical order of the PDFs so I can cross-reference rows against the originals at a glance.
Accuracy is critical: numbers must retain their formatting (decimals, currency, percentages) and text must stay exactly as written, including capitalization and punctuation. A quick spot-check formula on my end should match 100 % of entries to the source.
